Ingredients

Serves: 8 to 10
  • 1 Rotisserie chicken, deboned and chopped
  • 1 ½ cups instant white or brown rice
  • 2 cans (398mL) BUSH’S® Black Bean Fiesta Beans
  • 1 can (341mL) corn and peppers, drained
  • 1 can (340g) red enchilada sauce
  • 2 cups (450g) Mexican Style shredded cheese, divided

Cooking Instructions

    HEAT

    Preheat oven to 400 degrees F.

      PREP

      Spray a 9”x13” baking dish with cooking spray.

        COMBINE

        In a large bowl mix the first six ingredients with 1 cup of shredded cheese.

        • Rice

        • Cans of beans

        • Can of corn and peppers

        • Can of red enchilada sauce

        • Cheese

        ASSEMBLE

        Spread mixture evenly into baking dish and top with remaining one cup of cheese.

        Bake for 25-30 minutes until heated through and cheese is melted and bubbly.
